Planning a trip to Tanzania - advice

I'm planning a trip to Tanzania and would love some advice about operators, itineraries, etc. I really want to take a safari to Ngorongoro Crater, but am just starting the planning process. I found some good advice from this site:

    You might get a Michelin 955 map - Africa Central and South That will tell you the road conditions and where it is possible to reach. Then you might look at what the weather and wildlife are doing the season you plan to visit. I have found dragoman.com well organized, they exchange messages every few days updating conditions and experiences between all of their drivers. There are discounts for last minute booking for most operators. You can always use the detailed trip descriptions to plan independent travel. If you run across any Peace Corps volunteers, they know the good spots to eat local food!
